Pairings

Wine pairing notes

The spiciness of the dish commands a vigorous white, yet dry and fresh with some sharpness given by its acidity. These are the main characteristics of the Signifer, a Fiano di Avellino DOCG from volcanic soils, which has been chosen to pair the bittersweet shrimps. At the palate the wine releases hints of dry fruits and toasted hazelnuts, which are enhanced by the presence of cashew nuts. Signifier matches well with the shrimps and its persistence pairs and contrasts the spicy sensation of the food aftertaste.
