Description

Passobianco is made from 100% Chardonnay, cultivated in the eastern slopes of the Etna volcano, where usually strives the indigenous variety of Carricante. Passobianco displays elegant aromas of tropical fruits and some toasted notes.


Colour: Deep lemon colour with golden hints.
Aroma: Tropical fruits aromas, with citrus zest and fine herbs notes.
Taste: The wine has a smooth texture, with a vibrant acidity that balances the sip.

Alcohol: 13%

Grape: 100% Chardonnay

Ageing: 10 months in concrete vats and large oak barrels, followed by an additional 6 months in bottle

Winery

Andrea Franchetti works with two very different vineyard projects. He created his first estate Tenuta di Trinoro from scratch, on rough farm and woodland in the far-flung reaches of southwest Tuscany. Though a significant challenge, this was equaled by his endeavor on the slopes of Mt. Etna, which involved the renaissance of reclaimed formerly abandoned terraces of vines upon the volcano.
Both sites are extraordinary, complex, and poles apart in terms of terroir. From both its Tuscan and Sicilian estates, Franchetti has produced a portfolio of wines that is rich and diversified. Each wine expresses the characteristics of the vintage, the terroir and the potential of the different grape varieties.

This elegant dish by Chef Jack Zhong is characterized by the balancing between the black truffle and the other ingredients. Indeed, most dishes with black truffle tend to be dominated by the aroma of the truffle, but this is not the case for this fish soup. The smoothness and fattiness of both the fish soup and the cream counterbalance the powerful aroma of the black truffle.
Passobianco by Vini Franchetti winery is a very good match for this dish because its toasted and fine herbs aromas combine very well with the delicate flavour of the fish soup, enhancing it through each bite. Moreover,
the smooth texture and high alcohol content of the wine keep under control the black truffle aroma on the aftertaste.
